Baked Vegetables With Meat

Ingredients:
For this recipe, you will need ¾ kg of minced mutton, 2 small finely chopped onions, 4 cloves of crushed garlic, 1 teaspoon of cinnamon, 8 tablespoons of fresh chopped parsley, 4 tablespoons of butter, and 5 medium-sized long aubergines. Additionally, you will need 5 medium courgettes, 4 medium tomatoes sliced crosswise, 4 medium onions sliced crosswise, 5 medium potatoes sliced crosswise, 1 cup of stock, juice of half a lemon, and ½ liter of water.
Method:
Slice the aubergines crosswise and soak them for 10 minutes in water with a little lemon juice. Mix the minced mutton with onions, garlic, parsley, and season with cinnamon, salt, and pepper. Shape the mixture into round patties about 5 cm in diameter. In a heavy skillet, melt the butter and brown the meat patties over medium heat on all sides.
In a lightly greased baking dish, arrange the meat, onions, aubergines, tomatoes, courgettes, and potatoes alternately. Pour in the stock, add salt and pepper, and bake in a preheated oven at 350 °F (175 °C) for about 45 minutes, or until the vegetables are tender and the meat is cooked through.
